I stick to one-pan meals for weeknights, it is super simple and fast. My go-to is chicken and mixed veggies tossed in olive oil, garlic, and your favorite seasonings. Roast everything at 425°F for about 25 minutes. It is quick and it somehow tastes way fancier than it really is

My go-to is chicken fajitas, just toss sliced chicken, peppers, and onions in a skillet with some seasoning and you are good to go
